Kid's Favorite Meatloaf

When I first got married, my mom gave me one of her cookbooks because I had NONE. This is the one she gave me. I have really gotten my use out of it! Can't you tell? I love the recipes because they are pretty simple, but very good at the same time. Some of my favorites include: zucchini bread, peanut butter cookies, chili, beef stew, and meatloaf.

All my kids just love my meatloaf. They actually fight over who gets the last piece. Well OK, I guess not ALL my kids. I don't count my 7 year old because he only eats the healthy meats like hot dogs, pepperoni, bologna, chicken fingers, and chicken wings. But anyway, this really IS a great kid favorite recipe. My 11 year old once told me he doesn't know why kids always groan about meatloaf because he loves it so much. I told him it was because they haven't had MY meatloaf. The secret to it is the ketchup, brown sugar, and mustard topping. It's a cheap recipe, and I always have the ingredients for it on hand.


Meatloaf

2 eggs

3/4 cup milk

1/2 cup fine dry bread crumbs (I use about 1 cup seasoned bread crumbs.)

1/4 cup finely chopped onion

2 tablespoons snipped parsley

1 teaspoon salt

1/2 teaspoon ground sage

1 1/2 pounds ground beef

1/4 cup ketchup (This cookbook still calls it catsup!)

2 tablespoons brown sugar

1 teaspoon dry mustard (I usually used prepared.)

Preheat oven to 350'. Combine eggs and milk; stir in crumbs, onion, parsley, salt, sage, and 1/8 teaspoon pepper. Add beef; mix well. Pat into a 8x4x2 inch loaf pan. Bake 1 1/4 hours. Spoon off excess fat. Combine ketchup, sugar, and mustard; spread over meat. Return to oven for 10 minutes.

That is so funny that your post is about meatloaf! Tomorrow, my Hubby is bringing his accounting department to our house for a Christmas lunch. He brings leftovers to work every day, and he says they always express envy because it smells so good and he brags about what a great cook I am.

Anyway. When he asked them where they wanted to have the department Christmas lunch this year, they said, "To your house for your wife's meatloaf." Apparently, they all really like it. I've taken it in a few times in the past, but with twins this year, it's easier for me to have them all here. I've never understood why people like meatloaf so much, I mean, it's meatloaf!

That looks like a great recipe! And your cookbook looks tried and true. :-) The photo looks absolutely yummy!

My mother gave me that same cookbook and it is the one I still use the most often - I have even made that meatloaf - not that I cook all that often, but I have made it. TAke care. Kellan

My mom gave me that cookbook as well when I moved out on my own for the first time. It's still the one I used most often.

I have this very same cookbook (as well as the traditional one from Betty Crocker) and I often use both of them as a reference.

Meatloaf if always a hit in our house, and the leftovers make great meatloaf sandwiches!

I made the meatloaf. (And I have the cookbook, but do you think I would have looked in there to find the recipe?) I didn't have sage so I substituted garlic and curry. (They sounded good at the time.) I also added in green peppers just to make the kids eat more veggies. And I didn't really read the recipe, just the ingredients, so I added in the ketchup, mustard and brown sugar. THEN I read, and added it onto the top at the end. My husband said that's exactly why I'll never be named Chef of the Year. It was good, but a little sweet.

Hey, this is my mom's recipe and my kids LOVE it too. Even though my whole family loves it they still start the meal saying, "Meatloaf, shmeatloaf, double beetloaf, I hate meatloaf." I don't mind though because I taught it to them =).

I have the newer version of that cookbook. It is great!
My favorite meatloaf is on the back of the lipton onion soup mix. I follow those directions and substitute the ketchup with bbq sauce. And I brush more bbq sauce on while it's cooking. My sister Amy turned me on to that. It is delicious!!

I used crackers instead of bread. My boyfriend accidentally used mustard that was chili flavored, it turned out AWESOME!!!
